That night we both lay on top of the sheets unable to sleep, listening to the high-pitched excitement of a mosquito as it chose its next supper venue. For such a tiny creature, I have to say it has a helluva loud squeal, and the more I flailed the louder it became. There aren’t many more irritating noises than what sounds like a dentist’s drill kamikaze-ing at your head so in the end, armed with a size ten flip-flop in each hand I stood on the bed, head slightly cocked waiting for the manic squealing to return. Thwack-thwack. I let off both barrels of the flip-flop cannon, causing a snowfall of plaster flakes to drift slowly onto Joy’s head. Eeeeeeeee.’

I hadn’t even started the first steak yet! In the meantime I had slammed our hotel reception-type bell to let Joy know there was an order ready. Try as she might Joy couldn’t arrange the large oval dinner plates so three could be carried at the same time. She rested one on her left wrist and held another in the same hand but couldn’t find the right balance. Come back for the other one,’ I said, watching her struggle. It had seemed so simple when Mario managed to carry five at a time. Mind you, he did have hands like a couple of JCB buckets and, thankfully, Joy didn’t. Out with the hammer again, I bashed all three steaks and chucked them amongst the pork chops and burgers. I turned the chicken in the pan and turned the microwave on for the half chickens. The chips were plunged into the fryer, spluttering and spitting burning oil onto my hands and forearms. I laid more plates onto the table and grabbed handfuls of tomato, cucumber and onion slices and chopped lettuce, dumping a pile onto each plate as the aroma of burnt chicken filled the air again. I snatched the pan from the heat and decided that this time they would have to be resuscitated, so I added some white wine, crushed garlic and sliced mushrooms and replaced the pan over the blue flame.
After she had regained a little composure, she apologised to the rest of us and admitted she needed a break. Although it wasn’t the most convenient time to jump ship, in the middle of the summer season, Faith had decided that she was going back to the UK the following night. She’d spend a fortnight with her mum and then return for the end of the busy period. That left the problem of who would partner David on his shifts. We needed someone who could work 80 hours during the week, someone who could walk straight into the role without training. Michelle was the obvious choice but she wasn’t available for all those hours. Barry was available but wasn’t anywhere near capable. We had less than 24 hours to find someone. If we didn’t, the alternative was to close during the day and the three of us just manage the evening shift. That meant a substantial drop in income at a time when we had to make sure we banked all that we could. If not, when the season slackened we might not have enough to pay the mortgage, Jack’s loan or one of the dozens of other outgoings for which we’d assigned envelopes. It was a basic system but one that we all could manage. From just a handful of different envelopes, our financial distribution now had to be apportioned to almost 20 needs that we had to save for including ‘Holidays’, ‘Emergencies’ and ‘Christmas bonus’. Faith’s disappearance was considered an emergency and as such, it was this envelope that was raided to pay for her flight. The Rum Jug couple were sat at the bar. It was evident from their tired faces that all was not well. The enthusiasm and excitement that they had portrayed in Julie’s office was no longer evident.
